- 1/2 tsp. Chinese five-spice
- 1 Tbsp. fish sauce
- 1 garlic clove (grated)
- 2 carrots (peeled and cut into matchsticks)
- 1 daikon radish (peeled and cut into matchsticks)
- 1 Tbsp. sugar (+ 1/4 cup sugar)
- 1 Tbsp. salt (+ 1/8 cup salt)
- 1 cup warm water
- 1 cup distilled white vinegar
- 1 cucumber (thinly sliced)
- mayonnaise
- 1/4 cup fresh mint (roughly torn)
- 1/3 cup fresh cilantro (roughly torn)
- 1 jalapeno (sliced)

I'm still making this several years later and love it. I always have leftover pickled vegetables so I eat them for snacks. This week I used red radishes because I couldn't find daikon. Delicious sandwich!!!

Really delicious sandwich, I ended up using thai chilis instead of jalapenos because that was what i had on hand, but it worked really well. I would recommend using a little extra mint to cut through the spice and provide a hit of freshness but thats more of a personal opinion

Super delicious sandwich! I followed the directions but used a french sandwich roll - untoasted, and jarred tamed jalapenos instead of fresh. I'll definitely make this again and again!
