- turmeric (a pinch)

- 8 oz. firm tofu

- 2 cups mint (optional)
- salt (to taste)
- Vietnamese dipping sauce (for serving, recipe follows)
- 1 Tbsp. lime juice
- 1 Tbsp. sugar
- 1 fish sauce
- garlic paste (Chile-, like Sambal Oelek - 1tsp)
- turbinado sugar (¼cup, I used light brown sugar)
- low sodium soy sauce (¼cup)
- 3 Tbsp. rice vinegar
- 2 tsp. lime juice
- 4 cloves (minced)
- 1 Thai bird chile
