Ingredients
- 1 loin (venison, around 800g)
- 1 knob unsalted butter
- plain flour (to dust)
- 500 grams puff pastry (block all-butter)
- 4 egg yolks (medium free-range, beaten)
- 250 mL Madeira wine
- 500 mL beef stock
- 50 grams unsalted butter (chilled and diced)

- 125 grams skinless chicken breast (chopped)
- 1 knob unsalted butter
- 50 grams mixed mushrooms (ideally wild)
- 125 mL double cream
- 1 pinch cayenne pepper
- 50 grams plain flour
- 1 free range egg (medium)
- 60 mL whole milk
- 1 Tbsp. herbs (finely chopped, such as parsley, tarragon and/or chives)
- vegetable oil (to fry)
