- 2 cups beef stock
- 1 Tbsp. worcestershire sauce
- 2 Tbsp. cognac (or red wine)
- 3/4 cup sour cream
- 1 Tbsp. Dijon mustard (spicy)
- 1 Tbsp. dill (fresh chopped)
- 1 Tbsp. Hungarian paprika
- 1 Tbsp. flour (mixed in a slurry with 2 tablespoons water to thicken if desired)

This ended up amazing! I did put some steakhouse seasoning on the meat while it initally cooked but that is the only change. 100% I will make this again!

I made this with cuts of meat off the front shoulder of a large doe. It turned out GREAT! My kids called it a “freight train of flavor.” Thickened up a little, coated egg noddles nicely.

How do you elevate venison?? With this recipe!! The layering and depth of flavors absolutely surprised me. I used a creole spice blend when searing the venison, and substituted fancy and smoked paprika with cayenne to replace my lack of Hungarian paprika. Also, I added and reduced the Hennessy, cooking off the alcohol, before adding the stock. This dish is amazing!!

It was good, but 1 tbs of dill was way too much. I think next time I'll add parsley and perhaps lemon zest instead.

This was quick and easy. Seemed watery at first then I added flour and let it set for a few minutes before serving while it thickened up.
