- 500 grams venison (Shoulder Cut into large 3-4cm chunks)
- 300 mL red wine (I use Egri Bikavér but something like a Syrah would be ideal)
- 1/2 tsp. juniper berries (Lightly Crushed)
- 1/2 tsp. black pepper corns
- 1/2 tsp. dried thyme
- 2 Tbsp. Worcestershire sauce
- 1 tsp. dried rosemary
- 1 Tbsp. plain flour
- 1/4 tsp. salt
- black pepper (Good Grind of)
- oil (for Frying)
- 200 grams onions (Peeled sliced in half and then into half moons about 5mm wide)
- 300 mL beef stock
- 250 grams button mushrooms (Cut in half)
- 1.2 kilograms baking potatoes (Large)
- 8 spring onions (Sliced)
- 50 mL milk
- 150 grams butter
