- 1/4 cup hot water
- 2 Tbsp. fresh lime juice
- 2 Tbsp. Sriracha
- 1 Tbsp. fish sauce
- 1 Tbsp. dark brown sugar
- 1 Tbsp. cilantro leaves (minced fresh)
- 1 garlic clove (medium, minced)
- 1 English cucumber (quartered lengthwise and cut into ⅛-inch-thick slices)
- 1/4 cup rice vinegar
- 2 Tbsp. soy sauce
- 1 tsp. sugar
- 1/8 cup red pepper (diced)
- 1/8 cup jalapeno pepper (diced)
- 1 pinch salt (or to taste)
- 1/4 cup chopped fresh cilantro
