Description
A modified, low carb version of cheesy grits.
Ingredients

8 SERVINGS
- 2 cups cauliflower (riced)
- 3 Tbsp. heavy cream
- 4 eggs
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/4 tsp. paprika
- 1/2 lb. Velveeta® (cubed)
- 1 cup shredded mexican cheese blend (finely)

Directions
- Rice cauliflower in food processor. Microwave for 6 minutes. Set aside.
- Beat eggs with whipping cream. Add seasonings and shredded cheese.
- Place cauliflower in greased 8x8 pan and pour egg mix over it. Lightly blend. Push Velveeta cubes evenly into mixture.
- Bake at 350 for 40 minutes.
