This was great. Like the previous reviewer, I was very surprised how filling it was! It was full of more taste than a lunchmeat filled sandwich.
I used carrot chips bc they were easier to stack, roasted red pepper hummus, and a slice of pepperjack cheese (bc I deserve it!). I didn't add avocado and it was still very filling.

Super easy to make and oh so delicious ! I was surprised at how filling it was too . Highly recommend :)
