- 3 Tbsp. rice vinegar
- 2 tsp. natural sweetener (choice, I omitted but typically some sweetener is added to sushi rice, optional)
- 1 tsp. salt (or more to taste)
- 4 nori seaweed (sheets, or more, depends on how thick you want the rice layer to be)
- 6 oz. tempeh (smoked, smoked tofu would work too, cut into small strips)
- 1/2 avocado (cut into small strips)
- 2 tsp. sesame seeds
- soy sauce (Japanese style)
- wasabi paste
- pickled ginger
