- 3 cups baby spinach (fresh, or baby arugula)
- 1/2 cup fresh parsley
- 3 cloves garlic (whole or minced)
- 1/4 cup almonds
- 1 1/2 cups extra-virgin olive oil (good quality)
- 1 cup parmigiano (freshly grated, or chunks of, Reggiano)
- kosher salt (to taste)
- pesto (cauliflower, see recipe card down below)
- zucchini (fresh, raw, ; sliced into spirals, long strips or matchsticks)
- greens (fresh, or baby spinach)
- grape tomatoes (variety of)
- salad dressing (your fave, or extra virgin olive oil + balsamic vinegar)
- baguette (serve with a, or crackers)
- 13 oz. cauliflower
- 1/2 cup unsalted almonds (may substitute pine nuts)
- 3 sun-dried tomatoes (I use the ones in jars with olive oil)
- 1 oz. Pecorino Romano cheese (chunk, or Parmigiano-Reggiano; cut into chunks)
- 2 garlic cloves
- 1/2 cup green olives
- 1 Tbsp. capers (drained)
- 8 flat leaf parsley leaves
- 1 pinch crushed red pepper flakes (or more as needed)
- 3 Tbsp. olive oil
- 2 1/2 tsp. red wine vinegar (+ more if needed, to taste)
- salt (season with)
