- 1 red bell pepper (large, sliced, reserve 6-8 slices for decoration, if desired, optional)
- 1/4 cup sweet onion (loosely packed very thinly sliced)
- 2 Tbsp. nutritional yeast (optional, or replace with cheese of choice)
- 1 Tbsp. chopped fresh herbs (optional)

best quiche ever. i like to put in my own veggie combo and mux it up every time. i find i font need ad many eggs as the recipe calls for. i stuff it with veggies.

Very tasty. Added extra veggies. Next time I would add less time so the other flavors come out.

Yummy! I added grape tomatoes and mushrooms to use up veggies in the fridge along with the spinach and red pepper. Only needed 8'eggs in a frozen deep dish pie shell. Never been a fan of quiche but this one I Really enjoyed.
