- 4 medjool dates (pitted, see notes *)
- 4 Tbsp. tomato paste
- 3 Tbsp. low sodium tamari (Soy Sauce - we used San J – gluten free)
- 2 English muffins
- 1 1/2 cups panko bread crumbs
- 2 Tbsp. almond butter (organic, unsweetened)
- 1/4 cup ground walnuts (firmly packed finely)
- 2 tsp. dried parsley
- 1 tsp. onion powder
- 1 1/2 tsp. garlic powder
- 2 Tbsp. dried minced onion
- 1 1/2 tsp. sea salt (+/- to taste *)
- 1/4 tsp. black pepper (+/- to taste *)
- 1/4 tsp. sweet paprika
- 1/4 tsp. red pepper flake (dried, optional)
- 1/2 cup frozen peas (thawed to room temperature or microwaved to warm)
- 1/2 cup ketchup (Whole Food Plant Based compliant, or Barbeque sauce )
