- 1/2 white onion (diced)
- 2 cups baby spinach leaves
- 1 Tbsp. garlic (minced)
- 2 eggs (whisked)
- 1 cup greek yogurt (whole fat)
- 1/3 cup milk
- 1 1/2 cups sharp cheddar cheese (shredded and separated)
- 3 cups rotisserie chicken (meat pulled from one chicken)
- 1 pinch red chili pepper flakes (to taste)
- 1/2 tsp. dried basil
- 1 tsp. dried parsley
- 1 tsp. ground black pepper
- 1 tsp. salt
- 2/3 cup crisps (baked parmesan, crushed, I like Whisps)

Perfect. I’m glad I used fresh veggies instead of frozen which would have been too watery. Maybe I’ll add a little more salt to the meat/sauce mix next time.

This is a delicious recipe a great tribute to fresh cauliflower & broccoli The chicken tastes delicious in the gentle flavored sauce which is created - almost an Au gratin
Without the chicken, sans vegetarian , or an awesome potluck side - this would be a winner too
I’m a Weight Watcher, on the new Freestyle program, and it truly was a low point entry
I am going to work on cutting this in half, as there is only 2 of us, and I’m not sure if this would freeze well I’m going to experiment with frozen veggies- not to change the wonderful fresh vegetable flavor-texture
This is would be a great recipe for picky vegetable eaters, as there are many flavors,
