  • 2 tablespoons olive oil
  • 2 zucchini (cut into thick sticks)
  • 8 large eggs (lightly beaten)
  • 6 green onions (sliced)
  • 1/2 cup Parmesan (grated)
  • 2 tablespoons fresh basil (finely shredded, plus extra leaves for garnish)
  • 1 cup cherry tomatoes (halved)

    Directions

    1. Preheat oven to 400°F.
    2. Heat oil in an ovenproof pan on medium. Cook zucchini for 3 mins, until just tender.
    3. Whisk together the eggs, green onions, Parmesan and basil. Season. Pour over zucchini and scatter tomatoes on top. Bake for 15-20 mins, until set. Scatter over extra basil and serve with salad.
