- 1 cup portobello mushrooms (sliced)

- 2 Tbsp. fresh lime juice
- 1 Tbsp. brown sugar
- 1 tsp. worcestershire sauce (omit for vegetarian)
- 1/2 tsp. cumin
- 1/2 tsp. chili powder
- 1/4 tsp. smoked paprika
- 1/4 tsp. chili powder (chipotle)
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 2 garlic cloves (minced)
- 1/2 cup corn (cooked, I like grilled or roasted)
- salsa (your choice, I used a verde and a pineapple)
- 1/2 cup queso fresco cheese
- 1/2 cup cherry tomatoes (quartered)
- 1/2 jalapeno pepper (diced)
- 2 Tbsp. sweet onion (diced)
- 2 Tbsp. chopped fresh cilantro
- 1 lime (juiced)
- 1 pinch salt
- 3 Tbsp. greek yogurt
- 1/3 cup half and half
- 1 Tbsp. adobo sauce (from a can of chipotles in adobo)
- 1/2 lime (juice of)
- 1/2 lime (zest of)
- 1/8 tsp. salt
