- 1 cup red onion (chopped, about 1 small red onion)
- 1 red bell pepper (chopped)
- 1 bunch broccoli (or 1 small head of cauliflower, about 1 pound, florets removed and sliced into small, bite-sized pieces)
- 1 tsp. ground cumin (Frontier Co-op)
- 1/4 tsp. ground cinnamon (Frontier Co-op)
- 6 oz. baby spinach (about 5 cups, packed)
- 15 oz. black beans (drained and rinsed, or 1 ½ cups cooked black beans)
- 1 cup shredded Monterey Jack cheese (divided)
- 1/2 tsp. salt (to taste)
- freshly ground black pepper (to taste)
- 8 whole wheat tortillas (about 8” in diameter)
- 1 handful chopped cilantro (for garnishing, optional)

These were delicious!! I used broccoli, cauliflower, and only had jarred paquillo peppers, and used regular flour tortillas. Australia only has terrible jarred enchilada sauces so I used the recipe link and made the homemade sauce (super simple and also delicious). These were so flavourful, everyone in the family loved them. Will definitely make again!

Absolutely delicioso. A healthy take on a yummy Mexican tradition. I won’t go back. I feel better about myself and my family when I make it this way, even though it’s against my roots lol

I’ve made this a couple times, along with the homemade enchilada sauce- delicious. A full 5 stars - no complaints. Very versatile, use whatever veggies you have on hand. I used carb balance tortillas.
