- 1 1/2 cups cheddar cheese (shredded raw)
- 1/3 cup crumbled feta cheese
- 1/4 cup chopped red onion
- 1/3 cup roasted red pepper (chopped)
- 1 jalapeño (seeded and membranes removed, finely chopped)
- 2 avocados (ripe, from Mexico)
- 1 Tbsp. fresh lime juice
- 2 cloves garlic (minced or crushed through a garlic press)
- 1/2 tsp. salt (add more to taste)
- 2 Tbsp. chopped fresh cilantro
- 1/4 tsp. ground coriander
- 1 jalapeño (seeded and finely chopped, optional)
- 3 radishes (medium, top and bottom ends removed and finely sliced, or chopped onion, see note)
