- 1 inch ginger (nub of, finely chopped)
- 2 cloves garlic (finely chopped)
- 1 pinch salt
- 2 Tbsp. thai green curry paste
- 3 thai chiles (chopped, entirely optional)
- 14 oz. light coconut milk
- 1/2 cup water
- 2 tsp. turbinado (raw sugar or brown sugar)
- 1 pkg. extra firm tofu (optional)
- 2 tsp. rice wine vinegar (brown)
- 2 tsp. soy sauce (I used reduced-sodium tamari)
- 1 handful cilantro (chopped)
- 2 cups vegetables (seasonal, chopped, like broccoli, asparagus, carrots or bell peppers)

This turned out good. Will have to see how it fairs out on day 2. Added more curry paste as suggested but may still need more. I also needed some salt

Really great! Only four stars because I'm not sure whether it was just the particular curry paste I was using or not, but it definitely needed at least double what the recipe calls for.
I don't know how authentic the recipe is as I don't eat authentic Thai green curry on the reg, but it's definitely tasty!
