- 1 pinch ground cinnamon
- 2 Tbsp. tomato paste
- 2 cups vegetable broth (or water)
- 3 Tbsp. olive oil
- 1 tsp. apple cider vinegar (or distilled white vinegar)
- freshly ground pepper
- 15 oz. black beans (drained and rinsed)
- 1/3 cup Sour Cream (plus more for serving)
- 1/2 tsp. fine sea salt
- freshly ground pepper
- 8 whole grain tortillas (8-inch)
- 1 cup jack cheese (shredded Monterrey, 4 ounces OR a blend of cheeses)
- 1/4 cup pepitas (optional, I forgot these at the store SMH)
- 1 avocado (sliced into thin strips)
- 1 handful chopped fresh cilantro (for garnish, optional)
