- 1/2 lb. shiitake mushrooms (roughly chopped)

- 1 onions (generous cup of chopped)
- 1/4 cup olive oil (plus more for keeping the noodles from sticking to each other)
- 4 cloves garlic (chopped, about 4 teaspoons)
- 6 oz. tomato paste
- 2 cups tomato sauce
- 28 oz. crushed tomatoes (I recommend Muir Glen brand with added basil)
- 1 cup water
- 1 Tbsp. dried thyme
- 1/2 tsp. red pepper flakes
- 1 Tbsp. sugar
- 20 oz. frozen chopped spinach (thawed, squeezed in clean towel of excess moisture)
- 1 lb. lasagna noodles (16 to 20 noodles)
- 16 oz. ricotta cheese (container of)
- 1/4 cup fresh basil (chopped)
- 1/4 lb. pecorino cheese (or Parmesan, grated, about 1 cup)
- 1 lb. shredded mozzarella cheese (about 4 cups)

Very nice recipe. The end result is still too wet (my fault) and I'd prefer more layers. We tried with spinach and slices courgette, both very good. Suggestion to make the sauce more Bolognese, pure tomato sauce can be too much sometimes.

Held up very nicely. I had far less spinach on hand, than the recipe called for. It was still very delicious.

Awesome recipe! I am glad I went with this recipe rather than another vegetarian recipe for lasagna. The directions are clear and are more helpful for multitasking than most other recipes. My mother gave it a 10/10!

So good, I added chopped eggplant and I did cheat and added jarred marinara sauce in place of tomato paste and crushed tomatoes but followed the recipe other than that. It was so yummy I will definitely make it again!

based on feedback from my family it was delicious although because we don't eat meat I added some zucchini squash

I loved the receipe overall but made a few changes. I added oregano and combined the sauce and mushroom onion mix. Because I could not find Ricotta Cheese I used equal quantities of Greek Yogourt. My family loved it!

My guests loved it!!!it is brilliant and very easy to make. On top of the lasagna I added though a bechamel sauce before i put the Parmesan

Amazing recipe ! Would definitely try again. Very easy and simple recipe to follow. Would recommend using oven ready pasta so that it soaks up all the excess liquid

Had a friend over for dinner who is a vegetarian. Never thought something without meat could taste so satisfying, will definitely make this one again.
