- 1 red pepper (Large, chopped fine)
- 16 oz. cremini mushrooms (thinly slice and chopped, yes you can use other mushrooms if you would like.)
- 1 bunch scallions (sliced really thing, white and green)
- 1 stalk celery (chopped fine)
- 1 jalapeno pepper (or Serano, chopped fine)
- 2 1/2 cups green lentils (or cooked brown, prepare according to package)
- 6 cloves garlic (microplaned)
- 4 Tbsp. canola oil
- 2 Tbsp. tomato paste
- 28 oz. tomatoes (San Marzzano)
- 2 tsp. smoked paprika
- 2 Tbsp. chili powder
- 1/2 tsp. ground pepper (fresh)
- 2 tsp. salt (adjust to your taste)
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 4 Tbsp. brown sugar
- 4 Tbsp. balsamic vinegar
- 3 Tbsp. soy sauce
- 1/4 head cabbage
- 1 carrots (grated)
- 6 scallion (stalks slice thin)
- 1 Tbsp. apple cider vinegar (you can add more if you like it tarter)
- 3 tsp. peppers (Adobo, crushed, it comes in a small can in your International Aisle If you do not like spice or any heat...leave this out but it does add a ton of flavor!)
- 1/4 cup mayo
- 1/4 cup sour cream
