This is excellent! So many vegan shepherds pie used lentils which doesn’t sound appealing to me. This one was perfect. I used a sweet potato, a parsnip and some cauliflower for the mashed potatoes. Followed the rest of the recipe as written except didn’t use any oil. Turned out great!
