- 2 Tbsp. pesto (choice, I used Trader Joe’s Quinoa Pesto)
- 1/2 medium zucchini (chopped)
- 1 bunch kale (chopped)
- 1 cup sliced mushrooms
- 1/2 Tbsp. butter (or ghee)
- vegan Parmesan cheese (desired amount of homemade, or regular parmesan for serving)

honestly this is a tasty quick meal. my boyfriend and i love it he adds meat to his but we both enjoy it. being a vegetarian i sometimes find it hard to be creative with my meals and try bew things but this is a recipe that is ine of our favs. we substitute the banza pasta for whole grain and we mix in some red pepper flakes rather than traditional pepper.

The title/instructions are misleading, but the intent was to use Banza (brand) pasta that are made of chickpeas. Otherwise you can sub with a regular pasta. This was pretty good overall and easy to make.

Good and easy. I used two different types of mushrooms and used spinach, I didn’t have any kale. Could have used a little more moisture but we both liked. Thanks.

Might try with spinach instead of kale next time but it was really tasty as is. Family loved it

Yum! I fried fresh chilli with the butter before adding veg and added pinenuts. Easy and delicious, can make big batches, hubby happy - new regular on the menu 👌🏼

This was simple and delicious! I forgot the chickpeas, but it was tasty and filling without them. Will definitely make again.
