- 1 Tbsp. fermented black beans (rinsed and drained)
- 2 1/2 Tbsp. bean paste (Sichuan chilli)
- 2 tsp. red chillies (ground, optional)
- 1 Tbsp. ginger (finely chopped)
- 1 Tbsp. finely chopped garlic
- 100 mL stock (or water)
- 1/4 tsp. ground white pepper
- 2 tsp. potato flour (or corn flour mixed with 2 tablespoons of cold water)
- 1/4 ground roasted Sichuan pepper
- 1 Tbsp. Sichuan peppercorns
- 3 Tbsp. sea salt
