- 1/2 cup salsa verde (mild or medium)
- 1 Tbsp. tomato paste
- 1 can black beans (15 oz)
- 1 can pinto beans (15 oz)
- 3/4 cup dried lentils
- 1/2 tsp. chili powder
- 1/2 tsp. garlic powder
- 1/2 tsp. cumin
- 1/4 tsp. cayenne pepper
- 1/2 cup heavy cream (*, optional – see notes)

- tortilla chips (crushed, – my favorite!)
- shredded cheddar (or mex-blend cheese)
- jalapeños (sliced or diced)
- red onion (chopped)
- pico de gallo (fresh, or salsa)
- avocado (sliced)

- sour cream (or greek yogurt)

Very well-received by kids and adults! We added vegan sour cream once it was in our bowls and topped it with fresh cilantro, avocado and homemade pico. Prep time shouldn’t be underestimated however.
