- 1 cup Roma tomatoes (diced, 4 Romas)
- 1 pkg. jambalaya mix (Zatarain’s New Orleans Style, Original)
- 1 1/2 cups vegetable broth
- 1 cup red beans (cooked)
- 4 Corn Bread (cut out circles, to top peppers plus 1 cup cut into 3/4-inch cubes)
- 4 red peppers
- 1/2 cup grated cheddar cheese (coarsely, I used Cabot)
- chopped parsley
