- 1/2 head radicchio (*, finely chopped, about 2 cups)
- 1/2 red onion (medium, chopped, about 1 cup)
- 2 rib celery (chopped)
- 1 pt. cherry tomatoes (thinly sliced)
- 1/3 cup pepperoncini peppers (stemmed and thinly sliced pickled)
- 1/3 cup oil-packed sun-dried tomatoes (rinsed and roughly chopped)
- 15 oz. chickpeas (rinsed and drained, or 1 ½ cups cooked chickpeas)
- 1 cup provolone cheese (¼″ cubes of, optional)
- 1/3 cup extra virgin olive oil
- 1/3 cup red wine vinegar
- 1 Tbsp. Dijon mustard
- 1 tsp. honey
- 2 cloves garlic (pressed or minced)
- 2 tsp. dried oregano
- 10 twists freshly ground black pepper
- 1/4 tsp. salt (more to taste)
- 1 pinch red pepper flakes (for heat, optional)

This was delicious. I made a vegan version of it with vegan mozza cheese, vegan pepperoni and a mixture of regular lettuces, spinach, arugula, radicchio. I omitted the chickpeas but will add next time. I also used a slightly different mediterranean vinaigrette.
