Very rich and flavorful. I went the seafood route with stock, peeled shrimp, and small scallops. I made a loaf of crusty french bread to go with it. Definitely have all your prep done and organized so you can just add things in order without leaving the pot or needing to check the recipe too much. Maybe choose to pair it with something that will be completely done ahead or at least not need attention while cooking the gumbo and can be served at the same time. I also wish I had paired down the recipe. Made way too much.
