- 2 bouillon cubes (I use Rapunzel)
- 3/4 cup chopped cilantro
- 1 lime
- 2 tsp. salt
- 1 tsp. epazote (dried, or oregano)
- 1/2 cup pumpkin seeds (hulled)
- 35 oz. hominy (*, rinsed and drained)
- 30 oz. white beans (rinsed and drained)
- queso fresco (for garnishing, optional)

DEFINITELY making this again. I roasted a bit more than a pound of tomatillos. I also used chicken bouillon paste, 2 limes instead of 1, garlic salt, 2 bay leaves, and always extra garlic. Huge hit!!!
