Satisfying California comfort food. I have a microwave but no oven, so I fried the tortillas crisp so they wouldn't turn to goop in the microwave. Also forgot the salsa; I won't do that next time.

I put 4 stars for the recipe as-is. However, I replaced the salsa with enchilada sauce, added a can of tomatoes with green chiles (drained), and I wanted to eat the whole pan. Don't be afraid to alter the amount of zucchini/beans/corn, etc. Instead worry more about the mixture not getting too watery, as that's the only thing that will really affect this dish.
I just shredded a whole zucchini instead of worrying about if there was a cup, and had about 1/4 c more beans that needed to be used than it said. Still turned out fine. Also left out the cilantro just because I didn't have any on hand.
