- 2 cups black beans (cooked, I used canned organic and rinsed before using)
- 1 Tbsp. extra virgin olive oil
- 8 oz. baby bella mushrooms (sliced)
- 2 zucchini (small, diced, about 2 cups)
- 1 sweet onion (small, thin sliced)
- 1 cup frozen sweet corn
- 1 pinch salt (and pepper, plus more, if desired)
- 1/2 cup chopped walnuts
- 2 Tbsp. fresh lime juice
- 1 cup enchilada sauce
- 6 corn tortillas (super size, halved, you may use smaller tortillas however, you will need to use more than 6)
- 1 cup shredded cheddar cheese
- 1/2 cup queso fresco (optional)
- fresh cilantro (for garnish, optional)
