- 6 oz. chinese noodles (dried, *footnote 1)
- 1/4 cup vegetable stock
- 2 Tbsp. vegetarian oyster sauce (homemade, or store bought, *footnote 2)
- 1 Tbsp. Shaoxing wine (or dry sherry)
- 2 tsp. light soy sauce (or soy sauce)
- 2 tsp. dark soy sauce (or soy sauce)
- 1 tsp. white pepper (powder)
- 3 Tbsp. peanut oil (or vegetable oil)
- 1 Tbsp. ginger (minced)
- 1 carrot (peeled and julienned)
- 4 shiitake mushrooms (sliced)
- 2 heads baby bok choy (chopped)
- 1 pinch salt (and black pepper)
- 1 cup bamboo shoot (sliced, or 1 cup sliced red pepper)
- 1 cup bean sprouts
- 4 green onions (chop to 2-inch, 5-cm pieces)
- 2 tsp. toasted sesame oil (or 1 tablespoons homemade chili oil)
- green onion (Chopped, for garnish, optional)
- peanut (Crumbled toasted, or almond for garnish, optional)
