Perfect. Everyone loved it. Served w some salsa + sour cream. I'm definitely keeping this in my saved recipes for meatless nights.

turned out great, kind of played around with ingredient amounts and still turned out amazing and so simple. Recommended that any one who makes it use large tortillas.
