- 1 medium carrot (chopped)
- 2 stalks celery (chopped)
- 1 green pepper (medium, seeded and chopped)
- 1 red bell pepper (medium, seeded and chopped)
- 3 cloves garlic (minced)
- 1 jalapeno (seeded and minced)
- 2 tsp. cumin
- 1 Tbsp. oregano (dried)
- 1 Tbsp. chili powder
- 1 cup tomato puree
- 28 oz. chopped tomatoes (1 can)
- 2 qt. chicken stock (you can use vegetable stock if you can't find no chicken stock)
- 1 can red kidney beans (rinsed)
- 1 can black beans (rinsed)
- 1 pkg. crumbles (vegetarian meat, i prefer quorn)
- 1 can cannellini beans (rined)
- 2 limes (juiced)
- 1/2 cup tamari sauce
- 1 bunch fresh cilantro (minced)
- chili powder
- salt
- pepper (to taste)
