- 4 cups beans (cooked and cured chochos or lupini, about 20 oz)
- 1 red onion (thinly sliced)
- 3 tomatoes (thinly sliced)
- 2 oranges
- 10 limes (small)
- 1 bunch cilantro (finely chopped)
- 2 Tbsp. light olive oil (you can use regular olive oil, but I find that it overpowers the ceviche)
- 1/2 cup tomato sauce (or ketchup, adjust according to your preference)
- salt (to taste)
- nuts (Maiz tostado or cancha corn)
- chips (Chifles or plantain)
- popcorn
- avocado
- hot sauce (or Aji)
