- 2 Tbsp. olive oil (for sauteing May use more or less as needed)
- 1 onion (Large, diced)
- 1 poblano pepper (or two small, diced May also substitute a green bell pepper if you want less heat)
- 2 whole chipotle
- italian sausages
- 1 cup zucchini (diced)
- 1 cup squash (Diced)
- 1 cup mushrooms (sliced May omit if you don't like mushrooms)
- 4 cloves garlic (minced)
- 28 oz. tomatoes (1 can, Whole)
- 14 oz. fire roasted tomatoes (1 can)
- 2 Tbsp. tomato paste
- 2 Tbsp. oregano
- 1 Tbsp. basil
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1/2 tsp. crushed red pepper (Optional - if you don't like spicy foods, you can omit this.)
- 1 pkg. noodles (Spaghetti, cooked according to package directions)
- 8 oz. shredded mozzarella
- 8 oz. ricotta
- 8 oz. sour cream
- 8 oz. cheeses (Mixed Italian, I use a blend of parmesean, fontina, and asiago)
