- 2 lb. sweet potatoes (peeled and cut into 1/2-inch pieces)
- 3 Tbsp. crunchy peanut butter
- 1/2 cup edamame (shelled)
- 2 cups baby spinach (tightly packed)
- 1/4 cup cilantro leaves (chopped)
