- 3 Tbsp. olive oil
- 1/2 cup ragu old world style pasta sauce
- 3/4 cup part-skim mozzarella cheese (shredded)

Directions
- Preheat oven to 425°. Brush both sides of eggplant slices with olive oil. Arrange on baking sheet.
- Bake, turning once, until eggplant is tender, about 16 minutes. Remove from oven, then top with Pasta Sauce and cheese.
- Bake until cheese is melted, about 8 minutes.
