- 300 grams rotini pasta (or penne about 5 cups uncooked, I used Kamut rotini)
- 2 extra-virgin olive oil (-1)
- 1 cup sweet onion (chopped)
- 3 garlic cloves
- 1 orange bell pepper (chopped)
- 1 yellow bell pepper (chopped)
- 1 zucchini (small, chopped)
- 2 tomatoes (roughly chopped)
- 1 cup frozen edamame (or bean of choice)
- 1 cup fresh basil (packed)
- 1 avocado (small or half large)
- 1/4 cup fresh lemon juice
- 2 Tbsp. olive oil
- 1 tsp. kosher salt
