- 1 shallot (large, finely chopped)
- 3/4 lb. cremini mushrooms (trimmed and roughly chopped)
- 1/3 cup dry white wine
- 1/4 tsp. ground black pepper
- 2 Tbsp. chopped parsley

- 1 cup crumbled goat cheese
- 1 egg (whisked with 1/2 teaspoon water.)
