Absolutely love! Have made several times. I like it by itself but have also made with chicken and steak. Best to let it simmer longer than the recipe calls for to let the veggies and potatoes soften and all of the flavors to develop. Have also made in the crockpot. Always a winner!

I make this soup every winter and my kids absolutely love it. The best recipe for vegetable soup ever! Nothing fussy, just a nice bowl of comfort and packed with veggies. I usually just serve it with a nice warm baguette and butter and it’s amazing.

So good. Extra thyme and Italian seasoning were delicious. It’s also easy to add any available veggies, even spinach, and it’s even better when I cook it in my cast iron Dutch oven—such good flavor that way!

Tasty broth! I used the slow cooker method & my potatoes weren't quite done at 3 1/2 hours on high. Next time I will precook them if using the slow cooker. Overall it's definitely a keeper!

Delicious! It makes a large batch which is good because it goes fast. Next time I’ll make extra to freeze for work lunches.

This is my 3rd time making this soup. So easy and delicious. I've added a little red pepper for spiciness. Turned out very good. The kids Love it. Thanks for sharing.
