Delicious! Used a food processor to make it mushy and soft. Added quinoa instead breadcrumbs

So delicious! I added an egg to hold it together, and my potatoes I had to use extra potatoes but mine were very small. Also I made a spicy quick pickle to put on top. I wonder if a crunchier bread would have been better, too.
