- 1 Tbsp. toasted sesame oil
- 1/2 cup chopped green onion (keep the greens and whites separated)
- 2 tsp. freshly grated ginger
- 2 cloves garlic (minced)
- 6 cups vegetable broth (I like using mushroom broth)
- 1/4 cup miso paste (white or chickpea)
- 3 cups veggies (your choice, I used 1 cup shiitake mushrooms, thinly sliced, 1/2 cup small broccoli florets, 2 fresh carrots, peeled & thinly sliced, & 1/2 cup edamame beans – you can also just buy a stir fry veggie mix)
- 4 Tbsp. tamari (to taste, coconut aminos or soy sauce can also be used)
- 4 oz. brown rice noodles (maifun, half of the 8 oz. package)
