  • 1 cup flour
  • 1 cup bean sprouts
  • 2 celery stalks (with leaves, finely chopped)
  • 3 green onions (thinly sliced on the diagonal, plus additional, to serve)
  • 3 cabbage leaves (thinly sliced)
  • 2 shallots (finely chopped)
  • 1 small potato (peeled and cut into fine matchsticks)
  • 1 clove garlic (finely chopped)
  • 1/2 cup vegetable oil
  • chili sauce (to serve)

    Directions

    1. Sift flour and 2 tsp salt into a large bowl. Add 1 1/2 cups water and stir until smooth. Add vegetables, garlic and pepper to taste. Stir to combine.
    2. Heat oil in a large skillet or wok on medium-high heat (until a cube of bread sizzles on contact). Cook 2 tbsp batter per fritter, in batches, for 2 mins each side, until golden.
    3. Drain on paper towels. Sprinkle with additional green onion and serve with chili sauce.
