- 1/2 cup warm water
- 1 cup finely chopped onion
- 1 cup finely chopped carrot
- 1 cup chopped celery (finely)
- 1 Tbsp. vegetable oil
- 2 garlic cloves (minced)
- 1 tsp. fresh thyme (or 1/2 tsp dried thyme)
- 1 tsp. dried sage
- 1 tsp. dried dill
- 1 tsp. ground black pepper
- 2 cups potatoes (peeled and diced)
- 3 chicken (vegan “, ” flavoured bouillon cubes)
- 6 cups hot water (can substitute low-sodium vegetable stock for water and bouillon)
- 1/2 cup frozen peas
- 1 cup chopped kale (finely)
- 1/2 cup chopped parsley (roughly)
- sea salt (to taste)
