- 1 handful green beans (ends trimmed)
- 1 red bell pepper (small, diced)
- 1/2 green bell pepper (diced)
- 1 medium tomato (quartered/seeded/diced)
- 4 cloves garlic (minced)
- lemongrass stalk (1 -2 inches of Stalk/ diced very very fine)
- 3/4 cup unsweetened coconut milk
- 3 Tbsp. coconut oil (or Olive Oil)
- 1 1/2 cups vegetable broth (Low Sodium)
- 1 Tbsp. Tahini (optional)
- 1 tsp. liquid aminos (Tamari or Soy Sauce and be substituted)
- 1 Tbsp. curry powder (Mild Ground)
- 1 tsp. ground turmeric
- 1/2 tsp. smoked paprika
- 1/2 tsp. ground coriander
- 1 pinch cayenne pepper (or a little more if you like it spicy)
