- 2 1/2 cups flageolet beans (dried, – soaked in spring water for at least 12 hours)
- 1 Tbsp. extra-virgin olive oil
- 2 cloves garlic (large – skinned and left whole)
- 1 bouquet garni
- 2 sage
- 6 sprigs parsley
- 12 sprigs thyme
- 2 bay leaves
- 3 Tbsp. extra-virgin olive oil
- 5 slices country bread (sourdough, – cut in 1/2″ cubes, 5 cups)
- 1/4 tsp. sea salt
- ground black pepper (ground freshly, to taste)
- 1/2 cup extra virgin olive oil
- 1 Vidalia onion (large, – skinned and cut in 1/4″ pieces)
- 1 leek (– green leaves trimmed 3″ from top, halved lengthwise, thoroughly rinsed and cut in 1/4″ slices, 2 cups)
- 1 celery rib (– cut in 1/4″ pieces, 3/4 cup)
- 2 carrots (large, – peeled and cut in 1/4″ pieces, 1 1/4 cups)
- 3 parsnips (medium, – peeled and cut in 1/4″ pieces, 1 1/2 cups)
- 4 cloves garlic (large – skinned and finely chopped)
- 15 oz. plum tomatoes (can whole peeled, – coarsely puréed, use a food processor)
- 5 cups cooking liquid (reserved, from the beans, see Viviane’s tips)
- 3 tsp. sea salt (to taste)
- black pepper (ground freshly, to taste, lots of it!)
- extra-virgin olive oil (for drizzling)
- 2 Tbsp. parsley (curly leaf or finely chopped Italian, as garnish, optional)
