- 1/2 Tbsp. mixed spice (/pumpkin pie spice, or 1 tsp ground ginger and 1 tsp cinnamon)
- 1/2 Tbsp. cumin
- 1/2 Tbsp. ground coriander
- 1 Tbsp. olive oil
- 2 red onions (medium, peeled and cut into thin half moons)
- 2 carrots (cut into medium dice)
- 2 courgettes (diced)
- 1/4 cauliflower (broken into small florets)
- 1 sweet potato (large, or 2 medium, or 3 small)
- 1 tea bag (chai)
- 375 mL boiling water
- 10 dried apricots (snippped into quarters, can substitute for dried cranberries for FODMAP friendly)
- 400 grams chickpeas (tin of, rinsed and drained, optional)
- cooked quinoa (or cauliflower cous cous, around 400 grams)
- 4 Tbsp. yogurt (optional- though not paleo or vegan)
- fresh coriander
- chilli (Pickled or fresh, sliced)
- harissa sauce
- slivered almonds
