- 1/4 lb. cassava (yuca, peeled and cut into small pieces)
- 1/4 lb. malanga (yautía)
- 1/4 lb. west indian pumpkin (auyama)
- 1 plantain (unripe, cut into 1/2" slices)
- 1/4 lb. yam (ñame)
- 1 corn on the cob (cut into 1/2" slices, optional)
- 1 bunch cilantro (and parsley, chopped)
- 1 1/2 tsp. salt (or more, to taste)
- 1/2 tsp. pepper (or more, to taste)
- vinegar (Spicy bitter orange, to serve, optional)

This was incredibly delicious, filling and satisfying, which can be rare with vegan food.
Notes:
Yellow split peas take 2 hr and 20 minutes to dissolve. I wish they had noted this long cook time in the recipe so I was prepared for timing.
I used better than bouillon broth.
I gradually added different veggies every few minutes, depending on suggested cook times I found on google. For example: plantains take 25-30 mins, potatoes take 12-15 mins.
I used dried Mexican oregano instead of regular oregano, it has a different flavor. Added more broth toward the end so it wasn’t so thick.
I used all broth for liquid, no water.

although I kind of over did it with the root veggies it came out pretty good. The porcini mushrooms definitely completed the dish.
