This was incredibly delicious, filling and satisfying, which can be rare with vegan food. Notes: Yellow split peas take 2 hr and 20 minutes to dissolve. I wish they had noted this long cook time in the recipe so I was prepared for timing. I used better than bouillon broth. I gradually added different veggies every few minutes, depending on suggested cook times I found on google. For example: plantains take 25-30 mins, potatoes take 12-15 mins. I used dried Mexican oregano instead of regular oregano, it has a different flavor. Added more broth toward the end so it wasn’t so thick. I used all broth for liquid, no water.

although I kind of over did it with the root veggies it came out pretty good. The porcini mushrooms definitely completed the dish.
