- 5 cups rhubarb (leaves trimmed away, cut into 1-inch pieces on the diagonal)
- 1/2 lemon (large, preferably Meyer)
- 1/2 cup organic granulated sugar
- 2 Tbsp. cornstarch (or tapioca flour)
- 1 tsp. vanilla paste (or extract)
- 1/2 cup almond flour
- 1/2 cup old-fashioned rolled oats
- 1/2 cup sliced almonds
- 1/4 cup oat flour
- 1 1/2 Tbsp. tapioca flour
- 1/2 cup light brown sugar (packed organic)
- 1/2 tsp. ground cardamom
- 3/4 tsp. fine sea salt (I like my streusel salty with ½ teaspoon, but use the smaller amount if you prefer!)
- 5 Tbsp. vegan butter (or unsalted dairy, such as Miyoko’s, melted)
- non dairy vanilla ice cream (or Dairy, for serving)
- rose petals (Dried, for decoration, optional)
